Here I will add recipes that I have used on my fast days as a part of my 5:2 diet.
Stuffed mushrooms
I love mushrooms and stuffing them with cheese makes them even better. Stuffing 250g. mushrooms with 65g. of light cream cheese (6% fat) is only 142 cals for a really lovely meal. Serving on a bed of lettuce/greens is only a few extra cals makes the dish look really nice :) Vegetable soup
Nice to make this soup in advance and have a tasty low cal dinner ready on fast day. 1 tbsp vegetable oil 2 onions (245 g) 5 large carrots (340 g) 1 green bell pepper (150 g) 1 stalk of broccoli (185 g) 1 small head of cauliflower (390 g ) 2 L water 2 cubes vegetable bouillon 2 cubes beef bouillon chiliflakes and cayenne pepper to taste Heat oil in pot, add onions and fry for a minute. Add other ingredients and boil for 20-30 minutes. Put everything in a blender or use a "magic wand" to make a creamy vegetable soup. Makes about 8 4dl servings 71 cals each :) |
